Every year the Cherry Blossom Trees at Cookie HQ bloom with beautiful blossom and fill our gardens with bright colours and pink petals.
In Japan this Blossom is traditionally known as Sakura, which symbolises spring, hope, beauty and new life. We think that is something to enjoy.
To celebrate we are delighted to launch our latest Cookie - The Sakura Cookie - created in collaboration with Chef Yuki from Yuki's Kitchen.
Yuki's Kitchen is a wonderful Japanese Cookery School, based in London, where Yuki offers Cooking Classes and Workshops, opening up Japanese Cooking and giving inspiration for tasty meals and recipes.
Last Spring Yuki visited us at Cookie HQ to pick our beautiful Sakura Blossoms. She then took them back to her Kitchen, where she washed the buds and pickled them in Clear Spring Ume Su Plum Vinegar. Yuki always uses Clear Spring in her cooking for their organic, high quality ingredients.
Yuki told us that in Japan picking Sakura is a very special tradition, which can only be done over one or two weeks every year. Families save the Sakura and use it to decorate rice dishes and puddings for special celebrations.
